Healthy Egg Sandwich

Ingredients

  • 2 eggs
  • 2 slices of toast
  • 1 handful of chopped Spinach
  • 5 cherry tomatoes
  • 2 tsp cheddar cheese
  • 1 small onion – chopped
  • 1 tsp milk
  • Salt & pepper

Instructions

1.Heat a little cooking oil in a pan, add onions and cook for 2 minutes, then add the spinach and cook for another 2 minutes

2.Whisk the eggs with milk and salt & pepper, add cooked veggies mixture, tomatoes and cheddar cheese

3.Pour the mixture onto a sprayed baking sheet.

4.Bake at 375 degrees F for 25-30 minutes until the eggs are firm

5.Place toast on an oiled pan to have them toasted and crunchy

6.Cut the baked egg and place it onto your crunchy toast and enjoy!
